Mysterieuze en zeer verleidelijke biologische wijn en de trots uit Dalmatië (Kroatië). Afkomstig van het eiland Hvar waar de inheemse plavac mali druif de scepter zwaait op de bijna onneembare zuidelijke terrashellingen. De handmatige oogst en de natuurzuivere certificering dragen bij aan de uitzonderlijke grand cru kwaliteit. Diep donkerpaars kleur met uitnodigende aroma's van donker fruit, kruiden, specerijen, pure chocolade drop en leer. De smaak komt overeen met de aroma's en wordt afgerond met een sappige vlezige afdronk en edele tannine. Top kwaliteit met een mooie dichte structuur en een enorme complexiteit! Pure verwennerij.....

Vinification:
The wine is produced from the indigenous grape variety Plavac Mali crni grown on the controlled and limited locations only around and above the village Ivan Dolac on the southern expositions of the island Hvar which is known as the sunniest island in Croatia.The grapes are handpicked and delicately processed as quickly as possible in the nearby winery in controlled temperature conditions 26-28C. Inoculation of the selected yeasts and treatment ellagitannin to prevent oxidation of color.
The maceration of the grapes for the extraction of color and characteristic aroma usually takes a 6-10 days, depending on the conditions of the grapes and oenologistís decision. After the fermentation, the young wine is stabilized and prepared for maturing. When the wine reaches the highest point of it's development, not less then 2 or 3 years, it is ready for bottling it undergoes the microfiltration as that ensures the product stability.

This noble wine is characterized by its dark and deep ruby red colour with the hint of garnet shade.

Nose/Aroma and taste/flavour
It ages in inox tanks so its primary varietal aromas of dried berry fruits and grapes come to it's strongest expression and enhanced by a discrete secondary aging aromas. Its flavour reveals a strong, robust wine, rich in essence and ripe tannins making it elegant and smooth on the palat.
Aging:
Ivan Dolac has been maturing in stainless steel tanks for 5 years in controlled temperature conditions up to 14C before bottling and app. 6 months inbottle.
