Vinification:
The wine is produced from the indigenous grape variety Plavac Mali crni grown on the controlled locations on the southern expositions and the terraces in the inland of the island Hvar. The grapes are handpicked and delicately processed in controlled temperature conditions 24 - 26 C. Inoculation of the selected yeasts and treatment ellagitannin to prevent oxidation of color.The maceration of the grapes for the extraction of color and characteristic aroma usually takes a few days, depending on the conditions of the grapes and oenologistãs decision. After the fermentation, the young wine is stabilized and prepared for maturing. When the wine reaches the highest point of its development, it is ready for bottling it undergoes the micro filtration as that ensures the product stability.

Aging:
50 % of Plavac Mediterano has been maturing in oak barrels ( 225 L) for 12 months in controlled temperature conditions up to 14 C.
