Deze natuurzuivere wijn is ge?nspireerd op de 4 natuurlijke elementen, water, aarde, lucht en vuur. Een klassieker -gemaakt van cabernet sauvignon, cabernet franc , carmenere en caladoc (=grenache noir X malbec)- waarbij letterlijk de hele wereld mee op scherp wordt gezet. De klassieke Franse stijl wordt gecombineerd met de uiterste precisie van de nieuwe wereld. Een en al verleiding met aroma's van moerbei , pruim, kers en donkere rozijnen. De smaakconcentratie is ongekend waarbij de fruittonen zich afwisselen met een lichte kruidige noot. De sappige finish zorgt voor een brede inzetbaarheid. De fijne sluier van eiken (franse barriques) met de uitmonstering op zware flessen onderstreept zijn hoge komaf. Reeds op dronk (karafferen aanbevolen), maar voor de geduldige wijnliefhebber een ware parel in wording!!!!!

Region:
Thracian valley is a part of South Bulgarian wine region. From the North it is well protected of cold north winds by Balkan Mountains and further more by Rodopy mountain from the South
Climat and soils:
Temperature with sunshine duration over 3000 hours during the year and over 110 clear days. Hot dry summer with warm nights. Soft and warm winters. Withouth spring freezing and frost. Brown and grey Forest soils with good potassium content, well drained and with deep humus horizon. Good sunshine exposure
Harvesting:
Manual harvest in cassetts. Careful grape picking and grape selection.
Vinification:
The grapes are picked by hand and carefully selected. The fermentation is in small tanks of 1000 litres with temperature control and hand dipping of the hat in each 4 hours. The malolactic fermentation takes place in small barrels of French and American oak.
Tasting notes:
Dark ruby colour and purple depths. The nose is with magnetic fruity flavours of cherry, plum, black currant and with barrique finesse with hints of dark chocolate and vanilla. The taste has a strong Beginning, irresistible volume with good structure and length. The wine is harmonious with a warm finish and picturesque memory. A charming blend with noticeable aging potential.
Food accordance:
This wine is delicious with a variety of food and very suitable for red meat dishes.
